Roasted Okra


Rinse a bunch of okra, slicing off the very end of the stem—no need to remove the cap entirely.

Mix some olive oil with some curry powder and a bit of salt if desired.

Toss okra in olive oil mix.

Put on a sturdy baking sheet in oven at 500 degrees for ten minutes, shaking midway through to turn the okra.


Instead of curry powder, use some dried thyme, or experiment with other seasonings.
